1. While following recipes from recipe books, remember that cooking times vary from grill to grill. Do not go by the recipe book alone. 2. It is best to precook tough meat like thick cuts of meat or ribs before trying to grill them outdoors. Learn from other grill masters who have learnt the hard way that cooking a whole turkey on a grill is not such a great idea unless you precook it before hand.

3. Do not pull out frozen meat from the freezer and throw it directly onto the grill. It tastes better if you let it thaw for some time before you start to grill it.

4. Another good tip is to trim any excess fat from the meat before you start grilling. This helps in reducing flare-ups caused by juices dripping from the meat but more importantly it also reduces your fat intake.

5. If you are planning on using basting or barbecue sauces, make sure you apply them when the meat is nearly done and only needs a few more minutes of grilling. This will ensure that very little of the sauce will drip down into the flames, which will otherwise cause smoke and flare-ups.

6. Even if your meat gets charred or burned, do not throw away the entire piece. Just cut away the really burnt part and make use of the good portion.

7. Before you open up your home and your grill to your family and friends, try using the grill for yourself and a close bunch of friends. Practicing this way will help you prepare and plan for bigger events.

8. If you are using a charcoal grill, make sure that you are storing the charcoal in a cool, dry place. Unfortunately charcoal can absorb moisture very easily and not only does that affect its ability to burn quickly and burn well, damp charcoal can also start releasing harmful acids.

9. Before you start using your charcoal grill, open up both the top and the bottom vents to ensure proper circulation. This will help the charcoal to burn well and speed up the cooking process.

10. Once you are done cooking on a charcoal grill, just close the vents. Deprived of air, the charcoals will be quickly extinguished.

11. To ensure that there is proper airflow in charcoal grills, any ashes accumulated at the bottom of the cooker should be removed before you actually try to start a fire. Charcoal needs as much oxygen as possible to burn well and so anything that blocks the vent prevents proper airflow and efficient functioning of the grill.

12. When you need to handle meat, either while placing them on or off the grill or while turning them around, use long-handled tongs or spatulas. Using forks to do these jobs will only end up piercing the meat and letting the juices run out, making the meat less moist and juicy.

13. If there is some food that needs to be precooked either in an oven or in the microwave, it is best to do so and then immediately move the precooked food to the grill to finish cooking it. It is not good for precooked food to lie in the refrigerator or remain at room temperature before eventually being taken for grilling.

14. Always ensure that the grilling surface is clean since you will be placing the food that you will be eating on this surface. Preheat it so that even if there is any amount of leftover food or sauce, it can be easily removed. You could use a grill brush to clean it once it is preheated and of course, after using the grill.

15. Another way of preventing any food from sticking to the grill is to spray the grill with some non-stick oil. Of course you need to do this just before you place the food for grilling; else the oil may just burn off. Similarly, drain as much of the marinade as possible before grilling the meat so that not too much food gets stuck on the grill.

16. While every food has its own rate of getting cooked, normally it takes at least ten minutes over fairly high heat for a piece of fish or even the surface of a steak to get cooked well enough. Do not be in a hurry to turn the food over or to move it out. When the meat is well done, it holds well together and is a lot easier to remove – not to mention a lot tastier.

17. Though you may have a rough idea of how much time it takes to cook different kinds of food, you may be surprised by how much the cooking time depends on their position on the grill, the weather, how well the coals are burning and so on. It is therefore advisable to monitor the foods closely as they are being grilled.

18. If you find it difficult to remember when you need to check on the food, use a timer to keep reminding you.

19. Barbecue sauce contains sugar, which burns fairly easily. If you plan on applying barbecue sauce, do so only when the food is thoroughly cooked and needs only a few more minutes on the grill.

20. Make sure that all cooked food is placed on clean plates and not on previously used plates that contained raw meat.
