Grilling time for ribeye steaks really depends on both the thickness of the cut and the desired level of preparedness. Most cuts range between 3/4 of an inch in thickness to 2 inches thick. As a rule, the thicker the steak, the longer the grill time.

The recommended cooking method for steaks of any thickness is to sear the steak first over high heat. Sear for two minutes for steaks up to an inch thick, and four minutes for steaks 1 and 1/2 to 2 inches thick. Then move the steak over to a grill set to medium heat to finish cooking. For the thinnest cut of ribeye, the 3/4 inch steak, you want to cook for five to seven minutes for rare, seven to nine minutes for medium, and between nine and eleven minutes for well done. The same cooking times apply for the one-inch steak.

The 1 and 1/2-inch ribeye needs to cook for ten to twelve minutes for the perfect rare steak, twelve to fifteen minutes for medium, and fifteen to nineteen minutes for well done. Naturally, a 2-inch thick steak will take the longest to cook. For rare, cook fifteen to seventeen minutes; medium requires seventeen to nineteen minutes on the grill; and well done needs nineteen to twenty-two minutes.

Even following the above cooking times, you should invest in a meat thermometer to make sure your meat reaches the temperature safe for consumption. Regardless of thickness, rare meat needs to reach 125 degrees Fahrenheit. Medium and well-done meats are 140 and 170 degrees respectively.

Now that you have the grilling time for ribeye steaks, here's one last tip to make sure your meat is succulent and tasty. Only turn it once. Halfway through the grilling time flip the meat so it cooks evenly on each side. Flipping it constantly makes the meat cook unevenly and can dry your steak out.
