Retain your foods natural juices by smoking them in a Brinkman smoke n grill charcoal smoker. It will

You will need a smoker, charcoal, a charcoal pan, water pan, smoking chunks such as chips or chunks, meat, spices, rack and a flame. Soak about two cups of wood chunks in water overnight for best results if possible or at least for a few hours.

Prepare the coals in a pyramid shape and wet with lighter fluid. You could use about a quarter cup of fluid per pound of coals. Leave it for just under a minute. Add the chunks and place the pan in the lower ring of the smoker. If you need to smoke more meat, place the pan on the bottom. Ensure your surface is heatproof.

The pan should be filled with water, spices, beer or anything of your choice. The condensation of the boiling water will cover the meat. The water pan should be placed directly on top of the coals.

Place the meat on the rack above the water. Cover the smoker with the lid, the temperature will start to rise. Let it smoke for a few hours. A meat thermometer would be a good tool to use. Meats like turkey could take as much as twelve hours before it is ready.

To smoke meat is a long and slow process. You should be patient. Do not be tempted to put the meat in too early. This will cause the meat to have the taste of lighter fluid. Do not eat meat that is not properly cooked. For safety sake keep a fire extinguisher handy when using a charcoal smoker.
