hours.
Prepare the coals in a pyramid shape and wet with lighter fluid. You could use
about a quarter cup of fluid per pound of coals. Leave it for just under a
minute. Add the chunks and place the pan in the lower ring of the smoker. If you
need to smoke more meat, place the pan on the bottom. Ensure your surface is
heatproof.
The pan should be filled with water, spices, beer or anything of your choice.
The condensation of the boiling water will cover the meat. The water pan should
be placed directly on top of the coals.
Once the coals make a white ash on the top, the Brinkman smoke n grill charcoal
smoker is ready to use. Add any rubbing of your choice such as vinegar, brown
sugar, pepper and salt to your raw meat. Place the meat on the rack above the
water. Cover the smoker with the lid, the temperature will start to rise. Let it
smoke for a few hours. A meat thermometer would be a good tool to use. Meats
like turkey could take as much as twelve hours before it is ready.
To smoke meat is a long and slow process. You should be patient. Do not be
tempted to put the meat in too early. This will cause the meat to have the taste
